Fried Rice and Roasted Vegetables

Top: Hummus and cheese rolled up in spinach tortilla. Raw red bell pepper, chickpeas, and cucumber. Bottom: Fried rice (my husband made it and it was yummy!). Roasted vegetables: onions, brussels sprouts, red bell pepper, zucchini. The whole bottom tier is leftovers from last night's dinner. Mmm.
