French toast, banana, zucchini/carrot/oat muffin, and sweet potato hearts.
I tried a new muffin recipe to sneak some more veggies into our son's lunch. He normally enjoys zucchini muffins. This recipe includes zucchini, carrots, wheat flour, and oat flour. (Recipe here.) Last night he would not finish the muffin at dinner, so I wonder if his Spidey-sense tingled at all the added healthy stuff in the muffin. We'll see if he eats one today in his lunch!
I'm also trying this new Lock & Lock box which is part of a lunch set. The other one from the set has dividers. I love them both!
